Does anyone have a procedure for replacing the tenon seal, normally made from a fine string wound around the tenon? Wouldn't cork be a better (if less traditional) material?

I usually put cork on them all because that is what most customers ask for. I don't think I've ever seen an oboe with thread anyway.
However on bassoon bass joint tenons there is a strong case for using thread. The wood on those tenons is thin in comparison to the size & the thread provides strength that the cork doesn't have. A tenon that has minor cracks that have been glued is an automatic candidate for thread unless the owner insists when I will put a layer of thread (or carbon fibre) under cork.

Chip Owen at Fox cautions that you should only use linen (cotton) thread, not polyester. Also, bassoons with cylindrical tenons, such as Schreiber, should be corked. Bassoons with tapered tenons, such as Fox, can be corked or thread wrapped.
I follow the request of the customer, but, if not specified, I install cork. One advantage to thread is that it can be repaired without replacing it completely. Some people feel that cork does a better job of "coupling" the parts of the instrument; others don't.
Threaded tenons are a pain to do if you don't have a lathe, although I turn the lathe by hand, not under power.
